    Assam can go astringent; this one stays smooth. I brew 1 tsp per 8 oz and it’s sturdy enough for milk yet balanced enough to drink straight.

    Brewed at a rolling boil for 4 minutes. Big-bodied, richly malty, and a brisk snap on the finish that wakes the senses without tasting burnt. A splash of milk turns it velvet.
